Picture an October walk through a still-warm woodland, picking blackberries, redcurrants and elderberries along a winding path. That is precisely the image our Forest Walk herbal infusion is designed to bring to your cup.
This organic infusion blends tangy fruits and gentle botanicals into a rounded, indulgent and soothing bouquet. Caffeine-free, it suits any hour of the day, from hurried breakfasts to quiet evenings spent reading.
Blended with care by our team, it is part of our selection of organic herbal infusions, each one conceived as an invitation to slow down and savour a simple moment.
The aromatic profile of this forest walk
This wild berry infusion unfolds in three layers, much like a fine fragrance. Each sip reveals a different facet, and it is precisely this that makes it such a lively, expressive drink.
Top notes: as soon as you open the pouch, strawberry and cranberry release a fresh, lightly sweet scent that calls to mind childhood confections. Apple brings its crisp, almost sparkling freshness, immediately creating a sense of comforting indulgence.
Heart notes: on the palate, blackcurrant and blackberry unfold their deep tanginess, that velvety taste of ripe fruit picked at its peak. Redcurrant adds a lively sharpness that balances the blend and keeps the roundness from tipping into sweetness. It is this contrast that keeps every sip feeling alive.
Base notes: elderberries and rosehip settle into a woody, almost jammy length, while blackberry leaves and mallow bring a tender, vegetal texture that softens the finish and leaves a soothing trace of woodland on the palate.
The result: a luminous ruby-red cup, fragrant as a fruit coulis, with a tangy then rounded palate, no bitterness, no astringency. To explore this fruity world further, you may also enjoy our wild berry herbal infusion, which leans more towards small wild red fruits.
The ingredients in this infusion
- Organic apple: the round, naturally sweet base that softens the tang of the berries and provides underlying body.
- Organic elderberry: a deep, jammy note with a hint of spice, the signature of autumn woodland.
- Organic rosehip: the fruit of the wild rose, traditionally valued for its natural vitamin C content, it adds length on the palate.
- Organic blackberry leaves: tender vegetal texture with a light, leafy astringency that gives the blend structure.
- Organic redcurrant: a bright, fresh edge that balances the blend with its fine acidity.
- Organic blackberry: velvety ripe fruit character, with an intense colour that contributes to the luminous ruby of the cup.
- Organic blackcurrant: aromatic depth and the unmistakable character of dark fruits.
- Organic mallow: a gentle flower that adds floral roundness and contributes to the infusion's natural colour.
- Natural strawberry and cranberry flavours: accentuate the indulgent, tangy dimension of the bouquet.

How to brew Forest Walk herbal infusion
A great wild berry infusion calls for very little effort, but a few precise gestures. Here is our house method for drawing out all its notes in the cup.
Dosage: use 15 to 20 grams per litre of water, roughly 2 heaped teaspoons for a large 250 ml cup. The pieces of apple and rosehip are quite bulky, so do not hesitate to be generous.
Water: use low-mineral water, such as filtered spring water, brought to 100°C (a full rolling boil). Hard water muffles the fruity notes and can make the cup taste flat, while soft water fully reveals the tangy palette.
Steeping time: steep for 10 to 12 minutes, covered. Unlike green or black teas, a fruit infusion never turns bitter: this longer time allows the harder berries (elderberry, rosehip) to release their sugars and deeper aromas.
Straining: strain the infusion, then gently press the fruit in the sieve to recover the concentrated juice that so beautifully perfumes the cup. It is a small gesture, easily overlooked, yet it noticeably deepens the final result.
Iced version for summer
This infusion transforms into a remarkably refreshing cold drink. Brew it strong (25 g/L, 12 minutes at 100°C), strain, leave to cool slightly, then dilute with still or sparkling water and plenty of ice.
A few fresh mint leaves, a slice of lime and a drizzle of agave syrup turn it into a very successful alcohol-free cocktail, perfect for summer evenings. For more refreshing ideas, you might also enjoy our rose hibiscus herbal infusion, equally beautiful served iced.
Food pairings
This herbal infusion pairs beautifully with an apple crumble, a buttery shortbread, a thin red fruit tart, or simply a square of 70% dark chocolate. At breakfast, it is a natural companion for red fruit porridge or natural yogurt with honey.
In the kitchen, its concentrated cold brew makes a wonderful base for a homemade jelly, adds fragrance to an apple compote, or lifts a red fruit sorbet with extra colour and natural aroma.
Wellness notes and best moments to enjoy it
Caffeine-free, this infusion suits everyone and every occasion, including pregnant women (in moderate amounts), children from age 6, and those sensitive to stimulants.
Rosehip, the fruit of the wild rose, is traditionally recognised for its natural vitamin C content. According to the EFSA, vitamin C contributes to the normal functioning of the immune system and to the reduction of tiredness and fatigue, making this a pleasant drink during seasonal transitions.
Elderberries and blackcurrant contribute natural polyphenols (anthocyanins), responsible for the infusion's deep colour. These compounds are the subject of referenced research on PubMed regarding their antioxidant activity observed in vitro. As ANSES notes, these findings do not constitute a validated health claim, but they do highlight the nutritional interest of small red berries as part of a varied diet.
Julien Huot, founder of Thés & Traditions, personally selects each ingredient for its flavour qualities and certified organic sourcing, ensuring fruits harvested at peak ripeness and carefully dried.
Morning: a steaming cup at wake-up, a gentle alternative to coffee, rich in fruity flavour with no stimulants.
Afternoon: the ideal companion for a reading break, a snack with the children, or a focused work session without the heavy feeling a strong tea can bring.
Evening: a comforting cup after dinner that eases digestion without disturbing sleep. Try it as an end-of-day ritual and you will quickly make it your own.
Storing your herbal infusion
To preserve the freshness of the fruits and the delicate aroma of the berries, store your Forest Walk herbal infusion in an airtight container, away from light, moisture and heat.
An opaque metal tin, such as a tea caddy, is ideal: it protects against the UV light that degrades anthocyanins (the red pigments) and limits the oxidation of natural aromas. Seal it carefully after each use and keep it away from damp areas such as above the sink or next to the hob.
Consumed within 12 to 18 months of opening, it will retain all its fruity brightness and characteristic ruby colour in the cup. To discover other autumnal blends to store alongside it, you might also enjoy our apple cake herbal infusion, which leans more towards pastry and warm spice.
