Our strawberry raspberry herbal infusion was born from a simple desire: to capture, in a steaming cup, the full warmth of a handful of red fruits picked at the height of summer. Apple, strawberry, raspberry, hibiscus and rosehip come together in a tender, fruity blend where every organic ingredient plays its part.

Dosage: use 15 to 20 g per litre of water, roughly a heaped tablespoon for a large mug. Adjust to taste: a little more for a richer, more intense brew.
Temperature: bring your water to a full boil, 100°C. The heat is essential to draw out the flavours of the dried fruits and hibiscus fully.
Steeping time: allow 10 to 12 minutes. This longer steep (compared to green tea, for instance) gives the apple, strawberry and date pieces time to release all their natural goodness.
Iced version: let the brew cool, then pour over ice with a slice of lemon and a few fresh raspberries. A lovely option for summer afternoons, with no added sugar needed.
